HIBISCUS BERRY CHIA TEA




Chia (Salvia hispanica) is a beautiful flowering herb in the mint family native to Central America. When soaked in water, the mucilaginous nature of the seed makes Chia a diverse ingredient for smoothies, baked goods, sprouting, and soothing drinks. These marbled black, gray, and cream colored seeds are little treasure troves of omega 3 fatty acids, protein, fiber, and anti-oxidants. - Mountain Rose Herbs
Many of the recipes I find that contain Chia also include dairy or nut milks. I've seen THESE drinks on the market for loads of $$, and wanted to try my hand at making them myself. 
I love the tartness of the hibiscus paired with the sweetness of the honey. This tea is not only nourishing, but a perfect way to soothe your digestive system. 

Hibiscus Berry Chia Tea

1 TBSP + 1 tsp dried Hibiscus flowers
1 TSP dried rosehips
1 TSP dried orange peel
1 TSP dried spearmint leaves
1 cup frozen blueberries, softened & mashed
3 TBSP raw local honey
3 TBSP organic Chia Seeds

Boil 1 quart of water, turn off the heat and add the first 4 ingredients above (the tea blend). Cover & allow to steep for 15 minutes. Strain the bright red liquid into a pourable bowl. 
Allow to cool slightly, then stir honey until dissolved fully. Mix in the mashed blueberry mixture & chia seeds. 
Pour into a 1 quart container, seek & refrigerate. Allow the Chia seeds to produce gel for at least an hour but overnight is better. 
Shake the tea before serving and enjoy cold! 


GINGER THYME HONEY WITH PALEO MUFFINS


Homemade gifts are always great to receive. But when they are made from plants, all the better. 

I made this care package recently for a family member. The muffins were baked using coconut flour, giving them a dense, brownie like consistency. I used THIS recipe for bread and instead baked them in muffin cups. 

Using local, raw honey I made a small container of Ginger Thyme Honey to go alongside them. Thyme & Ginger are both culinary & medicinal herbs that can help fight infection, warm the body & when added to honey can also sooth a sore throat. 

To make the infused honey, place a small amount in a double boiler over low heat. Be careful not to allow the temperature above 120 degrees or you risk killing the beneficial enzymes in the honey.  Add a small handful of fresh thyme and a few slices of fresh ginger.  Allow the honey to warm, give it a quick stir, then turn off the heat and let cool. The medicinal properties in the Thyme & Ginger will infuse into the honey. The taste is divine! 

For an added treat you could include a compound butter mixed with a bit of brown sugar, cardamom & cinnamon. 

So the next time a loved one needs a little TLC, make them a pot of Ginger Thyme Honey. It can be added to homemade baked goods, but also stirred into tea for soothing relief from a cold & sore throat. Blessing & enjoy!

SWEET & LEMONY CARROT KALE SALAD


This sweet & lemony Carrot Kale salad recipe is so simple to make, it takes less than 10 minutes. Plus it's flavorful enough that my kids always ask for more. 

Ingredients:
3 or more cups of clean, chopped kale - stems removed
2 large carrots - turned into ribbons
1/3 cup raisins
2 TBSP sunflower seeds (optional)

Dressing:
2 TBSP warmed honey
1 tsp dijon mustard
juice of half a lemon
1/4 cup white balsamic vinegar (I use peach)
1/3 cup extra virgin olive oil

Close shaker cup & shake to combine. Pour half of the dressing over the salad, using clean hands mix dressing in.  Save remaining dressing for another day. Enjoy!
