Simple Salmon Patties

As every busy mom knows, dinnertime can quickly sneak up on you!  But you still want to feed the family a healthy & nutritious dinner, and with these Salmon Patties you can get the job done in less than 15 minutes.  This recipe feeds my family of 5.  I often serve them alongside a green salad drizzled with reduced balsamic vinegar, strawberries & frozen blueberries. If I have extra time I'll roast homemade sweet potato & parsnip fries.

Salmon Patties

4 packets Premium Wild Caught Pink Salmon (Chicken of the Sea brand)
2 small carrots, grated
1 TBSP of yellow cornmeal
2 eggs
sprinkle of salt & pepper

Preheat a sauté pan and add a bit of olive oil to cover the bottom.  Flake the salmon into a bowl with a fork, until broken into small pieces.  Mix in the two eggs, grated carrots, and enough cornmeal to form them into small patties. Saute them until brown on each side.

  2. Hi Sybil. You could use gluten free bread crumbs, or ground oats. You may also try rice flour, sorghum, or millet flour as well. I've only ever needed a bit just to hold it together, so use the least amount that works for you.
