Roasted Butternut Squash

Roasted Butternut Squash is a favorite in our house. These little bite sized morsels will be gone as quick as you make them!  I enjoy having them alongside salmon patties, and a side salad.  They would also be excellent with roasted chicken.  

Roasted Butternut Squash

1 Butternut Squash OR 1 bag of frozen, cubed organic butternut squash
1 TBSP of coconut oil
salt & pepper

Preheat oven to 375 degrees.  After peeling & chopping the butternut squash into small cubes, place them in a sil-pat lined baking sheet.  Melt your coconut oil and drizzle over the top.  Toss with your fingers until thoroughly coated.  Sprinkle with salt & pepper. Bake for 30 minutes, stirring at least once during this time to make certain all sides bake evenly.
