Gluten Free Taco Soup

It FINALLY happened!  I have a teenager in the house, and she loves to cook! I knew this day would get here, but I can't tell you how excited I am to turn the kitchen over to her and watch as she creates a healthy meal for the family.  AAAAAAAH! :-D 

We started off with a simple supper recipe. Taco Soup. It's customizable to what kind of veggies you have on hand at the time, and always turns out YUM! 


2 carrots chopped
2 celery sticks chopped
1 onion chopped
olive oil for the pan
1 cup Organic salsa
1 container Pacific Foods Tomato Soup
1 lb lean ground beef


Dice veggies on hand.  Here's where you can play around .. have a few heads of baby bok choy in the fridge, or perhaps a green bell pepper?  Chop up whatever veggies you like, and sauté them in a large pot with a bit of extra virgin olive oil. 

Once soft, add the ground beef & cook until browned. 

Then add the container of Pacific Foods Tomato Soup, 1 cup of water, and 1 cup of salsa.  Bring to a boil, cover, reduce heat & simmer for 20 minutes on low. Serve warm topped with cubed avocado.
