Creamy Cauliflower Puree


This dish was definitely a surprise hit in our house. Who knew cauliflower could be so creamy and delicious? The past few years, we've even replaced our mashed potatoes at Thanksgiving with this Creamy Cauliflower Puree. Bonus, it only takes minutes to make. 

Cauliflower also has a wealth of nutritional benefits. A one-cup serving of cauliflower contains:


  •  73% daily value (DV) of Vitamin C
  •  19% DV of Vitamin K
  •  15% DV of folate14%
  •  13% DV of pantothenic acid
  •  12% DV of Vitamin B6
  •  11% DV of choline
  •  11% DV of fiber
  •   9% DV of Omega-3 fatty acids *Cauliflower 
Ingredients: 

1 medium to large head of cauliflower
1 yellow onion
2 cloves of garlic
2 -3 TBSP grass fed butter
Salt & Pepper




Directions: 

Wash the cauliflower and break into floret sizes. Fill a double boiler with water. Inside a steamer basket or other steamer pot, place the cauliflower florets along with one yellow onion sliced thickly, and two whole, peeled heads of garlic. Cover with a lid and steam on medium high for 15-20 minutes until fork tender. Allow to cool slightly, then add steamed vegetables to a food processor. Top with 2 TBSP of grass fed butter, along with pepper and sea salt to taste. Blend until pureed, and pour into a serving dish. Top with fresh herbs and 1 TBSP of grass fed butter. Serve warm. We love having it alongside grilled salmon, and salad.
